General Tso's Tofu

2/3 cup cornstarch

1/3 cup flour

1/4 cup soy sauce

Dash pepper (5 Spice)

Approximately 1/2 cup of water

1 lb cake of medium or firm tofu (not extra firm), cut into 1 inch cubes

1 tbsp vegetable oil

vegetable oil for deep frying

1/3 cup sliced green onions

2 thai chili peppers

Sauce:

2 tbsp cornstarch

2 tbsp water

1 tsp minced ginger

1 tsp minced garlic

1/2 cup sugar

1/4 cup soy sauce

1 cup water

3 tbsp white vinegar

2 tbsp Chinese cooking wine

In a bowl, mix 2/3 cup cornstarch, 1/3 cup flour, 1/4 cup soy sauce, pepper and approximately 1/2 cup water.

Heat oil in pan for deep frying. Dip tofu cubes, one at a time, into batter. Fry in batches until golden brown and place on plate.

Sauce: mix 2 tbsp cornstarch with 2 tbsp water. Add garlic, ginger, sugar, 1/4 cup soy sauce, vinegar, cooking wine and water. Stir until the sugar dissolves.

Place 1 tbsp vegetable oil in a frying pan and heat. Add green onions and peppers and stir-fry briefly. Add the sauce and gook until thicken.

Spoon hot sauce over tofu and serve immediately over rice.
