Chickpea and Artichoke Sandwich

Makes 5 sandwiches

1 15oz can of white beans, rinsed and drained

1 medium avocado

1 15oz can of marinated artichokes (or packed in water), chopped

juice and zest of half of a lemon (or more to taste)

1/2 red onion, chopped

1/4 cup fresh parsley chopped (or 1 tsp dried)

1/4 cup fresh dill chopped (or 1 tsp dried) or more to taste

1 tbsp dijon mustard (or more to taste)

Bread

Salt and pepper to taste

Topped with veggies (e.g. arugula, pickled onions, spinach, tomato, cucumber)


In a bowl, add white beans and mash. Then add avocado and mash together. Add artichoke hearts, lemon, onion, herbs, mustard, salt and pepper. Mix and adjust for taste. Serve on bread, toast or with crackers.
