Apple & Butternut Squash Soup
Serves 4
2 tbsp butter
1 cup chopped onion
3 cups cubed peeled butternut squash
2 cups peeled, diced apple
4 cups chicken broth
1 cup apple juice
3/4 tsp salt
1/2 tsp ground coriander
1/2 tsp ground ginger
1/2 tsp nutmeg
1/2 tsp ground pepper
Chopped fresh parsley
Paprika
Creme fraiche (optional)
Melt butter in large pot. Add onion and saute until softened (about 5 minutes). Add squash and apple, saute for 2 minutes.
Stir in next seven ingredients (broth through to pepper). Bring to a boil, reduce heat and summer uncovered, stirring occasionally until squash and apple are tender (about 25 minutes).
Puree soup.Â
Serve sprinkled with parsley and paprika. Optional, add a dollop of creme fraiche.
