Serves 3
1 lb flank or sirloin steak, thinly sliced against the grain
2 bell peppers (red and green), sliced
1 large onion, sliced
2 tbsp vegetable oil
1/2 lb fresh green beans, cut into bite-sized pieces
For the sauce:
¼ cup soy sauce
2 tbsp oyster sauce
1 tbsp cornstarch
1 tbsp brown sugar
2 garlic cloves, minced
½ cup beef broth or water
1 tsp sesame oil (optional)
1 tsp black pepper
Make the sauce: In a bowl, whisk together soy sauce, oyster sauce, cornstarch, sugar, garlic, broth, sesame oil, and pepper.
Sear the beef: Heat oil in a large skillet or wok over high heat. Stir-fry beef until browned, 2–3 minutes. Remove and set aside.
Steam the green beans.
Cook veggies: Add peppers and onions; stir-fry until just tender, 3–4 minutes. Combine: Return beef to the pan. Pour in the sauce and stir until everything is coated and sauce thickens, 1–2 minutes.
Serve hot over rice or noodles or just by itself. Serve beans on the side but mix in to eat.
