Chicken Chow Mein
Serves 2
200g chicken breast, sliced
200g chow mein noodles
100g bean sprouts
100g bok choy, sliced
50g baby corn, sliced in strips
1 tbsp oyster sauce
1 tbsp sugar
1 tbsp garlic oil
3 tbsp vegetable oil
1/4 cup water at room temperature
Add chow mein noodles to boiling water for 1 minute. Drain and place noodles in a bowl or plate. Add garlic oil to noodles and mix well.
Add 2 tbsp vegetable oil in a non-stick wok or frying pan over high heat. Add bean sprouts, bok choy and baby corn and stir fry for less than 1 minute. Place them on a plate.
Add 1 tbsp of oil to same wok over medium to high heat. Add chicken and stir-fry until cooked. Add oyster sauce, sugar, water and noodles and mix well with the chicken.
Combine until the noodles absorb the liquid and then add the vegetables to the wok and mix well. Place on a plate and serve.
