Greek Style Potatoes

Time to complete: 2.5 hours

1/3 cup olive oil

11/2 cups water

2 cloves garlic, minced

1/4 cup (or less) lemon juice

1 tsp dried thyme

1 tsp dried rosemary

2 cubes chicken bouillon 

ground black pepper to taste

6 potatoes, peeled and quartered

Preheat oven to 350 degrees.

In pan (I use a glass 9 x 13 pan), add olive oil, water, garlic, lemon juice, thyme, rosemary, bouillon cubes and pepper.

Arrange potatoes evenly in the bottom of the pan, coating potatoes with liquid.  Cover and bake for 1.5 to 2 hours, turning occasionally - cook until tender but firm.
