Holiday Turnips

Serves 8-10

1 large turnip, peeled and cubed

1 apple, peeled and quartered 

1 tbsp butter or margarine

2 eggs, well beaten

3 tbsp flour

1 tbsp brown sugar

1 tsp baking powder

1/2 tsp salt

1/8 tsp pepper

1/8 tsp nutmeg

1 cup seasoned croutons or bread crumbs

3 tbsp melted butter

Boil water, add turnip and apple - boil together until tender. Drain and mash and add butter and well beaten eggs. Beat well.

Preheat over to 350.

In separate bowl, combine flour, sugar, baking soda, salt and pepper as well as nutmeg. Stir with fork to combine mixture. Stir mixture into the turnip.

Combine well and pour into a buttered 2 quart casserole dish.

Combine crushed seasoned croutons/bread crumbs with melted butter. Mix well and sprinkle on top. 

Bake 30-40 minutes.

This can also be made ahead of time and reheated.
