Ecuadorian Shrimp Ceviche

Serves 4 

2 lbs shrimp

1/2 red onion, chopped 

1/2 leek, chopped

1/4 green pepper, diced

1/4 red pepper, diced

1 tomato, chopped

2 celery stalks, chopped

Juice of 6 lemons

Juice of 2 oranges

In 1 Lt. of broiled water cook the celery and leek, reduce 1/2 and save it.

Cook shrimps in broiled water for 4 minutes and dry well or cook in lime juice over night.

Mix the everything and 2 teaspoons of vegetable oil. Serve - this is a traditional Ecuadorian ceviche so you can serve it with popcorn.  Yes, that's how that make it and it's awesome!
