Stir-fried Udon Noodles with Oyster Sauce

Serves 2

1 pack 454g fresh udon noodles

200g fresh bean sprouts

10 raw shrimp

3 tbsp vegetable oil

2.5 tbsp oyster sauce

1 tsp sugar

Loosen udon noodles and rinse them under boiling water.

Add 2 tbsp vegetable oil in a non-stick wok and heat over medium heat.  Add shrimp and stir-fry until cooked. Add bean sprouts and saute. Remove and set aside.

Add 2 tbsp to wok over high heat. Add udon noodles and stir-fry for less than 1 minute.  Add sugar and oyster sauce and mix well. Return shrimp and bean sprouts, mix well and serve.
