Makes 2 sandwiches
3 cups mixed vegetables (e.g. zucchini, eggplant, red bell peppers, mushrooms), sliced (can used jarred varieties as well and skip the roasting part)
2 tbsp olive oil
salt and pepper to taste
4 slices of bread or 2 ciabatta rolls
1/2 cup pesto
1 ball of burrata but can also use buffalo mozzarella or goat cheese
handful of arugula
balsamic glaze for drizzling
garlic butter (optional)
Vegetables: if roasting in the oven, preheat oven to 400, toss sliced vegetables in olive oil and salt and pepper, bake for 20-25 minutes. Or, saute them in a pan.
While doing the vegetables, either toast the bread or cut the ciabatta rolls, put butter, garlic butter or olive oil on the inside of the rolls, toasting them in a pan.
Once everything is ready, smear the pesto on the sandwiches, add cheese, vegetables, arugula and drizzle with balsamic glaze. Serve!Â
