Carrot Sambol
Serves 3
150 g carrot
150 g daikon
1/2 red bell pepper
2 tbsp cilantro
4 tsp green hot chili
2 small shallots (about 2 tbsp)
2 limes
2 tsp honey
Salt and pepper to taste
Peel and grate carrots and daikon using the largest holes of a box grater and place in a medium sized mixing bowl.
Finely dice red pepper and shallot.
Mince green chili and cilantro.
Juice the lime.
Combine carrot, daikon, bell pepper, shallot, cilantro, chili and honey in a mixing bowl- mix well. Add lime juice to taste.
Adjust seasoning with salt and pepper.
