Sour Cream Apple Cake

3/4 cup packed brown sugar

1 1/2 tbsp flour

1/4 tsp salt

1 egg

1 cup sour cream

1 1/2 tsp vanilla

3 cups sliced peeled apples (Granny Smith is best)

1 9-inch pie shell (unbaked, if using frozen pie shell, let thaw for 10 minutes before filling)

1/4 cup flour

1/2 tsp ground cinnamon

2 tbsp firm butter

Optional: toffee bits to top the pie

Preheat oven to 400.

In a large bowl, combine 1/2 cup brown sugar, 1 1/2 tbsp flour and the salt.

Stir in sour cream and vanilla and egg. Add apples and toss lightly.

Turn into pie shell. Either cover with toffee bits and cinnamon OR do the following: combine 1/4 cup flour, remaining 1/4 cup brown sugar and cinnamon; cut butter until crumbly and sprinkle evenly over pie.

Bake for 10 minutes, the drop temperature to 350 and bake for 40 minutes or until set. Cool on a wire rack.
