Chicken and Goat Cheese Salad

4 chicken breast, halved

6 cups mixed greens 

½ small red onion, thinly sliced 

1 yellow pepper, julienned 

5 oz goat cheese pinch of rosemary 

Vinaigrette 

½ cup olive oil

2 tbsp balsamic vinegar 

1 clove garlic, minced 

salt and pepper to taste 

Saute chicken with salt and pepper and rosemary.

Mix greens, onions, pepper and place chicken on top with goat cheese. Add vinegrette.
