Makes 4 cups
2lbs very ripe tomatoes, cored and chopped
¾ cups light brown sugar
2 tablespoons apple cider vinegar
1 tbsp grated ginger
¼ tsp cinnamon
¼ tsp ground cloves
1 tsp salt
½ to 1 tsp cayenne
Mix everything in pot and simmer between low and medium, stirring frequently until liquids are cooked out. Cool down and serve. The final result will be thicker than the original.
