Crispy Korean Beef

Serves 4

Step 1:

1lb sirloin beef, cut into bite-sized slices

1 tsp salt

1/2 cup cornstarch

2.5 tbsp Korean soy sauce

dash of black pepper 

enough oil for deep-frying

Mix salt, cornstarch, soy sauce and pepper then coat beef evenly.  Put oil in a pot, heat and divide beef into small quantities and deep-fry until crisp, repeat until all meat is done.  The longer you leave it in the oil, the crispier the beef will be. Place cooked beef on paper towel until ready to serve. Don't do this step too far in advance because the beef will loose its crispiness.

Step 2:

1 to 2 onions, sliced

1/2 tsp salt

1 tbsp vegetable oil

1 tbsp Korean soy sauce

Heat vegetable oil in frying pan. Add onions, stir-fry briefly. Put in salt and soy sauce, stir-fry for 2 minutes then remove and set aside.

Step 3:

1 tbsp cornstarch

1/2 cup water

4 tbsp Korean soy sauce

1 tbsp rice vinegar

1 tbsp Chinese cooking wine (shaohsing cooking wine)

1 tsp minced fresh ginger

2 cloves garlic, minced

5 tbsp sugar

2-5 tbsp chili bean paste

Mix all ingredients in step 3 in a small pot and stir over low heat until sugar dissolves. Then let the sauce boil and thicken.  

To prepare:

Put onion mixture, sauce from step 3 over rice and top with the beef.
