Wasabi Salmon

Serves 2 

1 salmon filet (about 370g) 

2 tsp wasabi paste 

2 tsp soy sauce 

2 tsp rice vinegar 

2 tsp minced fresh ginger 

1 tbsp brown sugar 

Preheat oven to 425 and line pan with parchment paper or foil.

Place salmon in pan. 

In small bowl, mix together wasabi, soy sauce, rice vinegar, fresh ginger and brown sugar. Reserve 2 tsp of mixture for later.

Pour remaining sauce over fish and bake 15 to 20 minutes.

When cooked, poor reserved wasabi over fish and serve over rice.
