Kale Salad with Apples, Apricots and Manchego Cheese

Dressing:

2 tbsp cider vinegar

2 tbsp lemon juice

1 to 2 tbsp sugar

1/2 cup mayonnaise

1/2 tsp kosher salt

Salad

1 large bunch of kale

1/3 cup dried apricots, julienne

1/3 cup pumpkin seeds

60ml Manchego cheese

1 pink lady apple, cored and cut into thin half moons

ground black pepper

In a large bowl, mix ingredients for dressing.  Add kale and toss to coat well then set aside for 10 minutes.  After 10 minutes, toss again.

Add remaining ingredients, toss and serve.
