Makes 3 bowls
2 boneless chicken breasts (or one package of Gardein chicken strips_
1 tbsp olive oil
1 tsp garlic powder
1 tsp dried oregano
juice of 1 lemon
Salt and pepper to taste
2 cups cooked couscous, quinoa or other grain
1 cup cherry tomatoes, halved
1/2 cucumber, diced
1/2 cup kalamata olives
1/4 cup feta
1/2 cup red onion, thinly slice
fresh parsley for garnish
Roasted Red Pepper Sauce
1 roasted red pepper (jarred is fine)
1/2 cup greek yogurt
1 tbps olive oil
1 tbsp lemon juice
salt and pepper to taste
In a bowl, toss chicken with olive oil, lemon juice, garlic powder, oregano, salt and pepper.
Grill and cook in a skillet over medium heat for 5-6 minutes. Set aside.
To make the sauce: in a mixer, combine roasted red pepper, yogurt, olive oil, lemon juice and salt and pepper. Blend until smooth and creamy.
To assemble bowl, add grain, chicken, tomatoes, cucumbers, red onion, olives and feta. Drizzle with sauce, add fresh parsley and serve.
