Serves 4
1.5lbs baby potatoes, halved
1/4 cup olive oil
2 tbsp red wine vinegar
2 garlic cloves, minced
1/2 small red onion, thinly sliced
1/2 cup kalamata olives, pitted and halved
4 tbsp capers, drained
1/4 cup sundried tomatoes, diced
1/4 cup feta, chopped
1/4 cup fresh dill, shopped
salt and pepper to taste
In a large pot of salted water, bring to a boil. Add potatoes and cook for 12-15 minutes, just not mushy. Drain and cool.
Once potatoes are drained and cooled, add olive oil, red wine vinegar, minced garlic, salt and pepper. Mix.
Add onions, olives, capers, sundried tomatoes, feta and dill. Mix gently and serve.
