Korean Sauteed Tofu

Serves 2

2 tbsp rice vinegar

2 tbsp mirin

1 tbsp soy sauce

1 tsp sesame oil

1/8 tsp kosher salt

1/4 tsp ground red pepper, divided

1 14 oz package of soft or medium tofu

2 tbsp canola oil, divided

1 oz fresh ginger, sliced

3 tbsp diagonally sliced green onions

1 tsp minced, fresh garlic

1/4 tsp kosher salt

1 tsp sesame oil

Combine vinegar, mirin, soy sauce, sesame oil, 1/8 tsp salt and 1/8 tsp ground red pepper in a bowl. Mix.

Cut tofu in cubes. Arrange tofu on paper towel to help it dry out.

Heat 1 tbsp oil in large, non-stick pan over medium heat. Add tofu, saute for 8 minutes or until crisp and browned on all sides. Remove from pan.

Heat remaining 1 tbsp oil and add ginger and garlic to pan. Saute for 30 seconds or until just golden. Add vinegar mixture, stir well. Add tofu to pan and mix. Add 1/4 tsp salt and sesame. Serve over brown rice.
