Rainbow Tortellini Alfredo

Serves 6 

700g pack cheese tortellini (3 coloured) 

500ml 35% whipping cream

1 large garlic clove, crushed 

1 tsp (5ml) dried oregano 

2/3 cup freshly grated Parmesan cheese, plus more for the table 

Salt and freshly ground pepper to taste 

Bring large pot of salted boiling water to a boil. Add pasta and cook until just tender (about 7 to 8 minutes). 

Place cream, garlic and oregano in very large skillet and bring to a boil over medium heat. When gently simmering, mix in cheese.

When tortellini is cooked, drain it, reserving ½ cup of cooking water. Add tortellini to cream mixture. Toss to coat. If too dry, add cooking water.
