Serves 3
For zucchini:
3-4 medium zucchini, sliced lengthwise then in 1/4 inch planks or just in chunks
1 tbsp olive oil
salt and pepper
For sauce:
1 tbsp rice vinegar
1 tbsp honey or maple syrup
2 tbsp soy sauce
1 tsp sriracha
1 clove garlic, minced
1 tsp fresh ginger, grated
2 green onions, diced
toasted sesame seeds for garnish
prepare the sauce
For the zucchini, brush with oil and sprinkle with salt and pepper. In a pan on medium heat, add the zucchini, cut side down. Cook for about 4 minutes, then flip and cook for another 3 minutes.
Add sauce to zucchini, bring to a boil for 2 minutes. Sprinkle with green onions and sesame seeds and serve.
