Curry Maple "Chicken" Penne

1 large onion 

3 cloves garlic, minced 

1 tsp chopped chives 

4 Tbsp maple syrup 

2 Tbsp oil 

2 Tbsp butter 

3/4 cups chicken stock 

1/4 cup cream 

1 Tbsp Patak's mild curry paste 

3 Tbsp cream cheese 

1.5lb chicken replacement 

Red pepper, slived (but you can use whatever pepper you like) 

2 cups penne (cooked) 

Cook onion, garlic, oil and butter together on medium high heat.

Add curry for 1 minute. Add maple syrup for 1 minute 

Add chicken stock and cream simmer on low boil until reduced to 1/3. This takes 7-8 minutes.

Cook pasta now.

Add peppers, chives, and chicken. Add cream cheese until well blended

Add penne and stir until well coated.
