Best Brisket (sweet) - slow cooker

1 cup (250mL) Coca-Cola (not diet, not Zero, just Classic Coke)

1 cup (250mL) apricot jam

1/2 cup (125mL) tomato sauce (homemade or store bought)

1 pkg. dry onion soup mix

1 tsp. (5mL) ground ginger

1 tsp. (5mL) kosher salt

Fresh cracked pepper, to taste

5 lb. (2.5kg) single brisket

2 tbsp corn starch, mixed with 1/4 cup of water

Mix marinade ingredients together. Place brisket in a ziplock bag and pour marinade over top; cover with foil and refrigerate overnight. Or, if you don't have time, several hours will do.

Add beef and marinade to slow cooker.  Cook on low for 6-8 hours.

Remove beef, put slow cooker on high and add cornstarch and water mixture and bring to a boil to thicken. Slice beef and serve with sauce from slow cooker.
