Penne with Roasted Peppers and Marscarpone

2 tbsp olive oil 

55 g (2 oz) pancetta or bacon 

2 chopped green onions 

1 red pepper, cut into match sticks 

3 leaves of basil, sliced 

2 tbsp mascarpone 

Salt to taste 

½ lb penne 

2 tbsp parmigano 

Heat oil in skillet, sauté pancetta until crunchy. Mix in peppers, basil and mascarpone. Let cook for 2-3 minutes. Salt to taste.

Cook pasta in salted water until done.

Mix pasta in with sauce, sprinkle with parmesan and serve.
