Mocha Chocolate Chip Cheesecake
1 1/8 cup graham cracker crumbs
1 cup mini chocolate chips (divided)
1 1/6 cups butter, melted
1/4 cup milk
2 tsp instant coffee granules
1/2 package unflavoured gelatin
1-8 oz package cream cheese, softened
1/2 of a 14 oz can sweetened condensed milk
1 cup whipping cream, whipped into peaks
In a large bowl, combine graham cracker crumbs, 1/2 cup chocolate chips and melted butter, mix well. Pat firmly into a 9-inch spring-form pan, covering the bottom and up the sides. Set aside.
Combine milk and instant coffee in a small bowl and sprinkle gelatin until both have dissolved, about 3 minutes. Set aside.
In a large bowl, beat cream cheese until smooth. Add sweetened condensed milk and gelatin mixture. Fold in cream and remaining chocolate chips. Pour into prepared pan. Refrigerate until firm, about 2 hours.
