Non-dairy Rice Pudding

1 cup sweet rice (sticky rice or jasmine rice)

1.5 cups water

2 cups rice milk (or soy milk) - vanilla

pinch of sea salt

1.5 tsp cinnamon

2 tbsp maple syrup

1 tbsp brown sugar (optional)

raisins

Combine rice, water, salt and cinnamon in pot and bring to a boil.  Cover and simmer on low until water absorbed (about 15-20 minutes).

Add rice/soy milk, maple syrup and brown sugar, simmer on low - stirring regularly until rice is soft ad gooey. Add more milk if desired.

Serve with raisins.
