Red Lentil Soup

Serves 4

1.5 tbsp olive oil

1 large onion, chopped

3 garlic cloves, minced

1 cup carrots, chopped

1/2 cup canned tomatoes

5 celery ribs, chopped

1 tsp ground cumin

1/2 tsp salt

1 cup dried red lentils

5.5 cups broth (chicken or vegetable)

2 tsp lemon juice, or to taste

Heat oil in saucepan over moderately high heat, saute onion, stirring until golden (about 5 minutes). Add garlic, carrots, tomato, celery, cumin, salt and saute for 2 minutes. Add broth and lentils and simmer, uncovered, stirring occasionally for about 20 minutes.
