Balsamic-Glazed Asparagus
Serves 4
1 lb asparagus, trimmed
1 tbsp olive oil
1/4 tsp each salt and pepper
1/4 cup balsamic vinegar
2 tbsp grated Parmesan cheese
Preheat oven to 400. Toss asparagus with oil, salt and pepper, place in a single layer on baking sheet and bake for 8-10 minutes (or until tender crisp). Or, saute asparagus for 3-4 minutes until tender crisp.
Meanwhile, in a small saucepan bring vinegar to boil; reduce heat and simmer until reduced by half and syrup-like, about 5 minutes.
Place asparagus in serving dish, drizzle with vinegar reduction. Sprinkle with Parmesan cheese and serve immediately.
