Makes 6 large mushooms
6 portobello mushrooms
Filling:
300g Goat Cheese
15g Heavy Cream
45g Breadcrumbs
1 Egg
300g of Spinach, Wilted, cooled and chopped
100g Toasted and Chopped Pecans
Salt and Pepper
Mix the filling together; before adding the egg, season with salt and pepper and taste to your preference.
Stuff mushrooms but DO NOT OVERSTUFF!
Once stuffed bake at 400F for about 10-12 minutes or until heated all the way through.
