Makes 3 serving
250 g seitan or extra firm tofu
10 shittake mushrooms, sliced
1 red onion, diced
4 garlic cloves, minced
1 tbsp ginger
8 cups vegetable broth
Miso Broth
4 tbsp miso paste
2 tbsp almond butter or tahini
1 tbsp sesame oil
2 tbsp soy sauce
1 tbsp chilli oil
2 tbsp rice vinegar
Garnish:
fresh cilantro
green onions
sesame seeds
Fry tofu/seitan for 2 minutes.
Add onion, garlic, ginger and sauté for 2 minutes. Add mushroom and cook until soft and golden brown (about 5 minutes).
Pour in vegetable broth, simmer for 10 minutes.
Make miso paste by adding ingredients to a small bowl. Whisk until smooth then add to simmering broth. Let it all simmer for 10 minutes.
Serve and top with garnish.
