Serves 3
2 cups uncooked rice
2 small heads of broccoli, chopped into florets
1.5lbs chicken or meat replacement (2 bags of Gardien)/tofu
2 tbsp olive oil
1 tsp salt
1/2 tsp pepper
1 tsp chili powder
1 tsp smoked paprika
1 tsp onion powder
1 tsp oregano
sesame seeds for topping
Sauce:
1/2 cup soy sauce
1/2 cup honey
1/4 cup rice vinegar
3 cloves garlic, minced
2 tbsp sriracha (or to taste)
2 tsp sesame oil
1 tsp ground ginger
2 tsp cornstarch mixed with 2 tbsp water to make a slurry
Spicy Mayo:
1/2 cup mayonnaise
1 tbsp sriracha
3-4 tbsp water to thin out the sauce to your liking
Cook rice and set aside. Steam broccoli and set aside.
For chicken/tofu/meat replacement - chopped into bite-sized pieces and coat with olive oil, salt, pepper, chili powder, smoked paprika, onion powder and oregano. Sauté until chicken is browned/a bit crispy.
To make sauce, combine soy sauce, honey, rice vinegar, minced garlic, sriracha, sesame oil and ground ginger in pot and bring to a boil. Boil for 4-5 minutes and then add slurry.
To make mayo - whisk together mayonnaise, sriracha and water until smooth and drizzle-ready.
In each bowl, layer rice, broccoli, chicken then drizzle over sauce and mayo. Top with sesame seeds.
