Vegetable Chow Mein

Serves 3

8oz chow mein noodles

2 tbsp oil

1/2 large onion, sliced stem to stem

1/2 large red pepper, sliced into 1/2 inch strips

1/2 large green pepper, sliced into 1/2 inch strips

1.5 cups bean sprouts

1/4 cup chopped chives

For Chow Mein Sauce

2 tbsp light soy sauce

1 tbsp dark soy sauce

1 tbsp vegetarian oyster sauce

1 tbsp sugar

1.5 tsp chicken/vegetarian/mushroom bouillon powder


Prepare noodles, bring a large pot of water to boil. Cook for 1 minute. Rinse with very cold water until cool. Drain thoroughly and set aside.

Prepare sauce. In a small bowl, whisk together soy sauces, oyster sauce, sugar and bouillon until everything is combined.

Heat pan/wok over high heat until smoking. Add onions and bell peppers, stir fry for 30 seconds. Cook underdesturbed until slightly charred on one side, about 1 minutes. Toss again. Add bean sprouts and chives, stir-fry for one minute.

Add noodles and toss to combine. Lee[ cpplomg amd stirring until noodles are toasty and totally dry - about 2 minutes.

Add sauce, mix virgorously and quickly mix noodles thoroughly until the sauce is distributed and noodles are all the same shade.
