Carrot & Daikon Salad
Serves 3
150g carrot
150g daikon
1/2 red bell pepper
2 tbsp cilantro
4 tsp green hot chili pepper
2 small Asian shallots (about 2 tbsp)
2 limes
2 tbsp honey
salt to taste
Peel then grate carrots and daikon using largest holes in a box grater and place in mixing bowl.
Finely dice red pepper and shallot.
Mince chili pepper and cilantro.
Juice the limes.
Combine all in a bowl and mix. Add salt to taste.
