Wedge Salad with Cottage Cheese

Serves 3

1 cup plain cottage cheese

2 tbsp mayonnaise

4 tsp lemon juice (or more to taste)

1 tbsp water, plus more as needed

1 tsp onion powder

1 tsp garlic powder

1/8 tsp  black pepper

1/4 cup finely chopped fresh chives and/or flat-leaf parsley (or a combination of the two)

1/4 tsp salt

2 romaine heads

Mix cottage cheese, mayonnaise, lemon juice, water, onion powder, garlic powder, salt and pepper. If it's too thick, add an additional 1 tsp of water, more if necessary. Add parsley/chives. Taste and season further if needed.

Cut romaine hearts in half, lengthwise. Place each half on a plate, drizzle with the salad dressing, add tomatoes and additional chives/parsley if using.
