Gnoochi with Bacon and Leeks

Serves 4 – 6 

Prep time: 10 minutes 

Cooking time: 15-20 minutes 

4 strips bacon

3 leeks, white and light green parts only, sliced thinly (about 3 cups) 

½ cup dry white wine or 2 tbsp white wine vinegar 

1 ½ cups whipping cream 

1 lb fresh/frozen gnoochi 

2 tbsp crumbled blue cheese or freshly grated Parmesan cheese 

Chopped fresh parsley 

Salt and pepper 

Cook bacon until crisp and transfer to paper-towel lined plate.

In same skillet that bacon was cooked, heat to medium low and drain off all but 1 tbsp of bacon fat.

Add leeks, ½ tsp salt and ¼ tsp pepper, cook, stirring, for about 8 minutes.

Add wine and boil until reduced by half. Crumble bacon into pan, simmer for about 5 minutes. Season to taste with salt and pepper.

Cook gnoochi. Drain well and add to sauce in the pan. Coat and serve – sprinkle with cheese and parsley.
