Makes 4 sandwiches
2 tbsp olive oil
1.5 red onions, sliced
8 slices bread
2 tbsp soft butter
4 tbsp fig jam
10oz brie cheese
1-2 cups arugula
1 large granny smith apple
In a pan, add oil and saute onions until carmelized (about 10 minutes)
Butter all slices of bread on one side. On the other side, spread fig jam, then add brie cheese, apple and arugula - top with other slice of bread.
Place sandwiches in pan, saute each side and serve.
