Thai Stir-fried Rice with Shrimp

Serves 4

4 cups cooked rice

10 shrimp, thawed

1 yellow onion, sliced

2 eggs

2-3 tbsp vegetable oil

2 tbsp fish sauce

2 tbsp sugar

1 tbsp seasoning sauce (Golden Mountain)

white pepper to taste (must be white, black has a very different taste)

1/2 cup fresh coriander

2 green onions, chopped

1/2 cucumber, diced

In a non-stick frying pan, heat 1 tbsp  oil over medium heat and stir-fry shrimp. Add onion and stir-fry until brown, then beat eggs and add them, stirring until cooked.

In a separate frying pan add 2 tbsp oil and add rice, drying until slightly brown.  Add rice to shrimp mixture.  Then add pepper, sugar, fish sauce, seasoning sauce, coriander and green onion.  Add cucumber and serve.
