Baked Salmon with Fresh Ginger

Serves 2 

Prep time: 30 minutes 

13 oz (370g) salmon fillet 

¼ c (50ml) Dijon mustard 

¼ c (50ml) brown sugar 

3 tbsp (50ml) soy sauce 

3 tbsp (50ml) rice vinegar 

1 tbsp (15ml) grated fresh ginger 

1 medium onion, finely chopped 

¼ tsp (1ml) red pepper flakes 

Preheat oven to 425. 

Line 8x8-inch (20cm) pan with parchment paper or foil. Place salmon in pan.

In medium bowl, mix together the Dijon mustard, sugar, soy sauce, rice vinegar, ginger, onion and red pepper flakes. Pour over salmon.

Baked 15 to 20 minutes, or until just done.
