Easy Lentil Soup

Serves 4

2 tbsp oil

1 onion, diced

1 clove garlic, minced

3 cups water or vegetable broth

1 cup dried lentils, rinsed

1 cup carrots, diced

1 potato, diced

1 tbsp worcestershire sauce

1 tbsp red wine vinegar

1/2 tsp salt

2 tbsp chopped parsely

16 oz can whole tomatoes (don't drain)

In a medium sized pot over medium heat, heat oil, onions, garlic and cook until onions are tender, add water/broth and tomatoes and simmer for 15 minutes.

Add carrots, worcestershire, vinegar and salt - cover and simmer for 25 minutes until lentils and vegetables are tender.

Garnish with parsley and serve.
