Bow-tie Pasta with Goat Cheese, Garlic and Fresh Basil

Serves 2

1 lb bow-tie pasta

3 tbsp olive oil

4 cloves garlic, chopped

1 small red bell peppers, chopped

4 medium shallots, chopped

1/2 cup chicken stock

1/2 cup white wine

1 tbsp lemon juice

1/2 dried basil

1/2 tsp sea salt

1/2 tsp black pepper

1/2 cup crumbled goat cheese

Bring large pot of salted water to boil, cook pasta for 8-10 minutes or until done.

While pasta is cooking, heat oil in pan, saute garlic, red pepper an shallots for about 5 minutes.  Add remaining ingredients except goat cheese. Saute for about 5-6 minutes. Drain pasta and mix into pan. Stir in goat cheese. Serve immediately.
