Chopped Salad Sandwich

Makes 6 sandwiches

3 large green lettuce leaves (e.g. boston, romaine, etc.)

1/2 can (15 oz) of chickpeas, drained

1 tomato

1/3 cup olive slices

2-3 tsp brine from olives

1/4 red onion

3 tbsp sun-dried tomatoes from jar (in oil)

2 tsp oil from sun-dried tomatoes jar

2 tbsp lemon juice (or more to taste)

1 tsp sriracha or more to taste

1 tsp dried oregano

Salt and pepper to taste

Toasted bread or flatbread

Dice everything together and mix. Serve on bread.
