Serves 2
2 bunches fresh broccolini, trimmed
7 tbsp olive oil
1 tsp sea salt, or to taste
1 tsp ground pepper, or to taste
2 cans cannellini beans, drained
3 dried chiles
3 garlic cloves, minced
2 cups cherry tomatoes
1/4 cup chopped parsley (curly or flat-leaf)
8 oz burrata cheese (or cottage cheese, ricotta or a vegan-based options)
1/2 cup pecorino cheese, grated (or parmesan)
1 lemon, cut into wedges
In a large bowl, add broccolini, 3 tbsp oil and salt. Mix and set aside.
In a large pan, heat 2 tbsp oil over medium-high heat - add garlic and chilies. Sauté for 30 seconds and then add beans. Spread out beans and cook until starting to brown, about 5 minutes. Remove from pan and set aside.
In same pan, add 2 tbsp olive and broccolini. Spread out and cook undisturbed for 3 minutes as it starts to char. Flip and press down, add lemon wedges and tomatoes allowing them to char as well. Let them cook for 3 minutes, until lemons are browning. Press down on lemons to release juice then mix with broccolini. Then add parsley, cooking for 2 minutes.
To serve, place beans on plate, top with broccolini and tomatoes. Then top with cheeses. Enjoy!
