Serves 2
Ground mince:
190g ground mince
1 tbsp mirin
1 tbsp ginger, minced
3 garlic cloves, minced
1 tbsp spicy bean sauce (toban djan)
1 tbsp oil
Soup Base:
3 tbsp soy sauce
2 tbsp sesame paste or tahini
2 tsp rice vinegar
1/2 tsp sugar
1 tbsp chili oil
3 cups vegetable stock
1 cup non-dairy milk
Toppings:
2 bok choy
pack of noodles (ramen, udon)
2 green onions, green part, sliced into half-inch segments
Heat up the pot on medium heat, add mince and remaining ingredients for minced. Mix well and cook.
Meanwhile, mix soy sauce, tahini, vinegar, sugar, chili oil and whisk well.
Add stock and milk to mince. Bring to a simmer. Add soy mixture.
Bring to a boil, add bok choy and green onions.
In a bowl, place noodles and then add soup - serve!
