Serves 2
350g halloumi, cubed
1 red bell pepper, cut into chunks
1 green bell pepper, cut into chunks
2 red onions, cut into wedges
1 zucchini, cubed
3 tbsp maple syrup
2 tbsp wholegrain mustard
1 tbsp olive oil
1 tsp thyme leaves
1/2 tsp ground black pepper
salt to taste
Preheat oven to 400
In a bowl, whisk maple syrup, mustard, oil, thyme, pepper and salt. Add halloumi and vegetables, toss to coat and marinate for at least 20 minutes
Place everything on a tray, reserving some of the marinade. Bake for 20 minutes and add a bit more marinade. Bake another 20 minutes. Remove from oven and add remaining marinade and serve.
