Serves 4
1 cup of coconut milk
2 cups unsweetened almond or oat milk (or vanilla flavoured)
1/2 cup of chia seeds
4 tbsp maple syrup
1 tsp vanilla extract
pinch of salt
Fruit - you can pick whichever you want - mangoes (2 large), blueberries, strawberries, raspberries, etc.
Whisk together coconut milk, almond/oat milk, chia seeds, maple syrup, vanilla and salt. Then add chia seeds and rigorously whisk to prevent them from clumping.
Refridgerate for at least 2 hours or overnight.
Spoon into serving bowls and top with fruit.
