Vegetable Beef Barley Soup

Modified from Betty Crocker

***needs a crock pot****

3/4 cup chopped onion

3/4 cup green beans

2/3 cup uncooked barley

2/3 cup corn

1 1/2 cup water

1 tsp salt

1 tsp thyme

1/4 tsp pepper

1 1/2 lbs stew meat

1 small pepper, chopped (1/2 cup)

2 cans (14 1/2 oz each) beef broth

Mix all ingredients in a crock pot.

Cover and cook on low for 8-9 hours or until vegetables and beef are tender.

Makes 10 servings.
