Crispy Air Fryer Fish

Modified from Pampered Chef

Fish

4 white fish fillets (4-5 oz each, about 1 inch thick) [They used cod, I used halibut]

Pam

1/4 cup mayonnaise [I so didn't measure, just brushed a thick layer on]

2 tbsp butter, melted

1/2 cup panko breadcrumbs

1/2 tsp garlic herb seasoning

salt and pepper, to taste

Vinaigrette

2 tbsp lemon juice (or one lemon, juiced)

2 tbsp olive oil

1 tsp Dijon mustard

1 tsp honey

1 tbsp dry minced onion (they used fresh chives, which I didn't have and wasn't buying)

salt, to taste

Pat fish try. Spray your air fryer with oil (so the Pam). Place fillets in it and brush each with mayonnaise.

Mix melted butter, panko, seasoning and S&P in a small bowl. Evenly spread over fish and press firmly to adhere.

Set air fryer to 380 and cook for 9 - 18 minutes (yes, that's a big range...they say 9 minutes, it took me 18, but it will depend on your fish), until the fish is 140.

While cooking whisk vinaigrette ingredients together.

Serve fish with vinaigrette.
