Fajita Burgers

Modified from Rachael Ray's 30 Minute Meals

Burgers:

1 1/3 lbs ground beef (sirloin if you want to go pricey)

2 tbsp Worcestershire sauce

1 tbsp chili powder

1 1/2 tsp cumin

2-3 tbsp fresh thyme (or 2-3 tsp dried thyme...which is what I used)

several drops hot sauce

1 tbsp grill seasoning

oil for drizzling

Topping:

1/2 tbsp oil

1 red (or green if you are cheap) bell peppers, seeded and thinly sliced lengthwise

1/2 medium onion, thinly sliced, reserve 1/8 of a piece, uncut

1/2 jalapeno or serrano pepper, seeded and chopped

1 cup tomatillo, green chili salsa or chipotle-tomato salsa (this was hard to find and I found something I thought was this and it seemed to work so hopefully it will be easier to find for you)

Heat grill pan or large skillet over medium high heat.

Combine ground beef, worcestershire sauce, spices, hot sauce and grill seasoning. Divide meat into 4 patties, each 1 inch thick. Use the reserved onion piece and grate it onto the patties. Drizzle oil on the patties. Cook patties 4 minutes on each side for medium or until desired doneness.

Heat a medium skillet over high heat. Add oil and pepper and onions. Stir fry the veggies tossing them to sear them at edges. Add the jalapeno or serrano pepper. Stir fry the mixture about 3 minutes, then add salsa and cook one minute longer.

Place burgers on each bun bottom and top with 1/4 of the pepper and onion mixture and bun top.

Makes 4 servings.
