Chicken Bites

Modified from Simple & Delicious

2 tbsp. grated Parmesan cheese

1 tsp ranch salad dressing mix

1 1/4 cups finely chopped cooked chicken

1 1/4 cups (5 oz) shredded cheddar-Monterey Jack cheese

1/4 cup sauce (Buffalo wing sauce, teriyaki sauce or BBQ sauce)

1 tube (13.8 oz) refrigerated pizza crust

2 tbsp. butter, melted

Preheat oven to 400. In a small bowl, combine Parmesan cheese and 1 tsp. dressing mix. In a large bowl, mix chicken, chees and sauce. On a lightly floured surface, unroll pizza crust and pat into a 14 by 12 inch rectangle. Cut into 24 squares.

Place 1 rounded tbsp. chicken mixture on the center of the each square. Pull corners together to the enclose filling pinch to seal. Place on grated baking sheets, seam side down. Brush tops with butter; sprinkle with Parmesan cheese mixture.

Bake for 15-17 minutes or until golden brown. Serve with blue cheese dressing if you want.

You can also use wonton shells and bake at 375 for 15-20 minutes, flipping once halfway through the cooking.

Makes 24 bites.
